Carrabba’s History

Carrabba’s is an Italian cuisine restaurant chain that was first opened in 1986. It’s named after the founder, Johnny Carrabba, who together with his family own the two original restaurants along Voss Road and Kirby Drive. As of 2015, there were approximately 247 franchise locations operating under the Carrabba’s brand name. This company is owned and managed by Bloomin’ Brands which is based in Tampa, Florida.

Following a joint venture with Outback Steakhouse Inc. in 1993, 10 new locations were opened in Florida and Houston. About 2 years later, Outback Steakhouse Inc. gained the rights to develop the Carrabba’s brand countrywide. In 2008, they partnered with HMSHost to launch the first airport restaurant site in Tampa International Airport.

In 2013, more locations were opened in the state of Florida than in any other place in the U.S. Most of the dishes found on Carrabba’s menu are borrowed from Grace and Rose, who are the mother and sister of Johnny’s uncle Damien respectively. Damien Mandola was instrumental in supporting Johnny Carrabba during the restaurant’s initial days.

All these dishes are original and some of the recipes were featured on the PBS cooking show Cucina Sicilia, which is hosted by Mandola and Carrabba. One of the most popular recipes from Carrabba’s Restaurant is Chicken Bryan which is an 8oz grilled chicken breast dish topped with sundried tomatoes, caprino cheese, and basil lemon butter sauce. The meal is named after Bryan City in Texas where the Carrabba family moved to.

According to the founders, food isn’t just something for eating but actually a big secret. It’s something that occurs when all their interconnected families mingle together, the Carrabbas and Mandolas as well as others who have a good sense of dining. The restaurant owners know that food plays an important role in our social lives and it’s always present at events such as births, weddings, christenings, and graduations. In fact, Johnny Carrabba and Damien Mandola describe themselves as two Sicilian boys from Texas who love to cook and eat.

Summary

Carrabba’s Italian Grill does their part to offer a lot of gluten-free options. They even have a gluten-free pasta alternative to substitute in their pasta dishes. However, they do note operate a gluten-free kitchen, so cross contamination is possible with any of their food. They do a good job providing gluten-free options, but we’re not sure about recommending it to those with a gluten allergy or a high intolerance.

    • Hey Kathleen,
All Carrabba’s should have some decent gluten-free options. I’ve been to a couple and was always happy.

  1. THANK YOU for your GF options. I can safely eat real food and had our first date with you plus we now always celebrate our anniversary too! Please, please find a gluten free baguette! I’m tired of sneaking in one so I can enjoy your delicious olive oil. UDI’S Gluten-Free French Baguettes, Schar Gluten-Free Baguette, Against the Grain Baguettes are great and all can be kept frozen so no waste. Schar also has a long shelf life. While I have balked at paying $2+ for bad hamburger buns, the above all taste great toasted, even my husband likes them, and I would pay $10 extra for 2 if served hot & toasty. The worst feeling is sitting there while everyone is enjoying dipping the bread, or mopping up the sauces.

  2. be careful to review the official allergen menus that Carrabba’s posts. the server I had at the Orlando Vineland site insisted the sausage and lentil soup was gluten free. the as allergen menu states it contains wheat
