P. F. Chang’s History

P. F. Chang’s is a Chinese-themed restaurant chain that contains more than 40 locations spread across 19 states in America. The company was founded by Philip Chiang and Paul Fleming in 1993 in Scottsdale, Arizona. Their goal was to make great food from scratch every day in their restaurant. The restaurant owes much of its success to Paul Fleming’s unique idea of blending oriental cuisine with American-style dining service. In 1996, the company opened its first restaurants in Houston, Denver, and Las Vegas. They were testing new markets and prospective customer pools.

Philip Chiang says that for a meal to be considered Chinese, it must be eaten with chopsticks. Thus, at P. F. Chang’s, meat and vegetables are always chopped uniquely so that they can be eaten with chopsticks. Moreover, their scratch kitchen cooking style allows the restaurant to be particular with incoming orders. Diners who are lucky enough to sit by the eatery’s kitchen can enjoy the aroma of sizzling oil and the rush of the hot flames which is indeed a culinary masterpiece.

Additionally, P. F. Chang’s has an extensive wine list that’s categorized based on flavor rather than cost or region. Wine still plays an important role in their modern restaurant dining experience. Likewise, the restaurant’s innovative cocktail ideas continue to excite guests every day. They also have fresh juices hand-squeezed each morning and tasty house-made ginger beer.

Furthermore, the bistros are known for their stylish décor, displaying unique artwork from the T’ang and Ming Dynasties, including hand-painted murals. The dishes are also very affordable, mainly because one of Paul Fleming’s goals was to offer high quality but reasonably priced Chinese food for customers.

While Fleming still owns roughly 12% of the chain and acts as a consultant together with Chiang, the company itself is managed and directed by the current CEO and President Richard Federico. Other members of the executive team are CFO and Secretary Bert Vivian as well as COO Greg Carey.

Summary

P. F. Chang’s does a great job at providing a good amount of gluten-free dishes and a couple desserts to enjoy. We like that they go to the effort to make gluten-free sauces and marinades for their meat and other dishes. It’s also great that they have a separate gluten-free menu that you can ask for when dining at their restaurant which makes things really simple. They do still make a lot of food which contains gluten in their kitchen, so there is always going to be the risk of cross contamination. But they offer a lot of options and will try their best to accommodate those with special dietary needs.

  1. I have celiac and have never become ill eating at P.F. Chang’s. I just wish you would have a restaurant in Woodbury, MN. I know Pei Wei is there but only a few choices. Maple Grove is a long way away from our home in WI. Thank you!
