Rubio’s has a great selection of gluten-free items on their menu. If you’re looking for some Mexican inspired seafood, this could be the place you’re looking for. They due note that due to their preparation environment, some cross contamination is possible, and a few items such as their tortilla chips use a shared fryer. Also make sure to get corn tortillas if you are ordering any of their tacos, as the flour tortillas contain gluten. Rubio’s History

Rubio’s is a fast casual restaurant chain that specializes in fish tacos among other dishes like calamari and french fries. The first location was opened in 1983 at a site on Mission Bay Drive in Pacific Beach San Diego. The company is named after its founder, Ralph Rubio, who together with some of his friends from San Diego University sampled fish tacos at a small stand in San Felipe after visiting the region for a holiday. They were impressed by the idea and decided to open their own restaurant serving the same cuisine back home upon returning.

Rubio’s fish tacos are unique from the rest in how they are prepared and served. The fish is battered, fried and offered in a corn tortilla. For those who want a change, grilled mahi-mahi can also be found at several locations across the country. Currently, the franchise operates more than 100 restaurants with most of them being found in Southern California. In the Los Angeles area, there are approximately 40 restaurants, though Rubio’s has also expanded to four other states including Colorado, Utah, Arizona and Nevada.

Additionally, the restaurant serves more than 40 unique dishes that borrow from the traditional cuisine of the Baja region in Mexico. The restaurant chain’s menu has recently been updated to include various seafood dishes such as shrimp quesadillas, lobster burritos and many more. They also serve marinated, grilled chicken and steak.

To keep the costs of opening new locations down, Rubio’s determined that restaurants will only operate within specific cost and size limits. Nowadays, the price to open a typical 2,000 to 2,400 square foot restaurant with Rubio’s is about $380,000. Moreover, through their creation of more than 100 restaurants spread across the country, Rubio’s has proven that it’s a company that can meet all its customers’ needs without compromising on quality even for a moment. Like many other fast food chains, Rubio’s is still striving to expand their market reach by improving their menu and providing promotional items as well.

Summary

Rubio's has a lot to offer when it comes to gluten-free food. Due to the type of food they offer, most of their menu items don't contain gluten without any modifications which is great. We do wish they went the extra mile to avoid cross contamination in their preparation environment, but for those who are just looking to avoid gluten, most of their food should be safe to eat. Just make sure to stick to the corn tortillas instead of flour.
